Homemade Saturday Linky Party: Shrimp Etouffee

Hey kids!  Cindy back on the SBC blog today.  I have a recipe to share.  A couple of years ago my husband and I had an opportunity to visit New Orleans.  So, when we got home I had to try and make some of the food we had while we were there.  I found this recipe on Pinterest from Eat, Live, Run.

You can find a ton of pictures and step-by-step directions here:  Eat, Live, Run

Shrimp Étouffée
serves 6-8

Ingredients:
2 lbs raw, deveined shrimp (tails off) OR 3 lbs crawfish tails if you can find them!
2 sticks butter
1 cup flour
1 cup chopped yellow onions
1/2 cup chopped green onions
1 heaping cup chopped celery
3/4 cup chopped green bell pepper
1/2 cup minced fresh parsley
1 tbsp minced garlic
1 14-5 oz can diced tomatoes with green chilies (Rotel or other brand)
2 – 3 cups seafood stock
1/2 tsp cayenne pepper
2 tbsp Tony Chachere’s Cajun Seasoning
2 tbsp Worcestershire sauce
1-2 tsp Louisiana hot sauce (I love Crystal hot sauce)
Directions:
Assemble all ingredients before starting to cook!
Melt the butter in a large heavy-bottomed pot over medium/high heat. Once melted and bubbling, sprinkle the flour over top and mix with a rubber spatula until a smooth paste forms. If your paste is very thin, add a little bit more flour. Keep stirring and cooking over medium heat until roux turns the color of peanut butter. It will smell nutty and delicious.
Add the chopped onions, celery, green onions, bell pepper, garlic and parsley to the hot roux. Cook the vegetables until they soften—about three to five minutes. Stir continuously.
Add the diced tomatoes and chilies along with seafood stock. Add additional stock if mixture looks too thick (I added extra). It should be thick, but be a sauce-like or stew-like consistency. Mix well so there are no lumps.
Add cayenne, Tony Chachere’s, Louisiana hot sauce and Worcestershire sauce and stir well. Bring mixture to a boil and slide in shrimp. Reduce heat to low and simmer until shrimp are done, about 15 minutes.
Serve Étouffée with rice, mashed potatoes and/or crusty rolls for dipping with extra Louisiana hot sauce on the side!
Time:
1 hour (includes time to prep all ingredients)

Note:  I cut the recipe in half and used 1 1/2 lbs of crawfish tails.  This turned out sooo yummy!  I'm going to make it again for Mardi Gras this year.

My big pot of Etouffee.

I served it with rice.

Thanks for stopping by today.  I hope I've inspired you to try that recipe you've been wanting to make :-)  If you have any questions or suggestions, please leave them in the comments. Building Block Graduation Card

Hello, everyone! Melissa here on to share a "building block" style card with you. I made this one graduation themed, since there are a ton of graduations going on right now. Hope you enjoy this card, and are inspired to try it out yourself. Here is the tutorial I followed from Split Coast Stampers. To make it easier, I will give you all the measurements, here. It looks harder than it is, I promise. Start with a piece of cardstock in your desired color that is 5.5 x 10.5. Put the 10.5 inch side along the top of your score board or paper trimmer, and score at 3.5 inches and 7 inches. Fold the first score line in a mountain fold, and the second in a valley fold. You should end up with a "z" fold card. The next part can get a bit tricky, so make sure you watch the video to fully understand what I am about to explain. On the back side of the "valley" fold, take a ruler and pencil and mark these measurements: 3/8 1 3/8 1 5/8 2 5/8 2 7/8 3 7/8 ...
